Oat Flour Chocolate Chip Banana Muffins
Ingredients
- ⯈ 2 cups oat flour (you can make your own by blending rolled oats in a food processor) ⯈ 1 teaspoon baking powder ⯈ 1/2 teaspoon baking soda ⯈ 1/4 teaspoon salt ⯈ 3 ripe bananas, mashed ⯈ 1/3 cup melted coconut oil or melted butter ⯈ 1/2 cup honey or maple syrup ⯈ 1 large egg ⯈ 1 teaspoon vanilla extract ⯈ 1/2 cup chocolate chips (plus extra for topping)
Method:
01. Preheat Your Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the cups.
02. Prepare Oat Flour: If you don't have pre-made oat flour, you can make your own by blending rolled oats in a food processor until you have a fine flour-like consistency.
03. Combine Dry Ingredients: In a large bowl, whisk together the oat flour, baking powder, baking soda, and salt.
04. Mix Wet Ingredients: In a separate bowl, combine the mashed bananas, melted coconut oil or butter, honey or maple syrup, egg, and vanilla extract. Mix well until all the wet ingredients are incorporated.
05. Combine Wet and Dry Ingredients: Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
06. Add Chocolate Chips: Gently fold the chocolate chips into the batter, ensuring they are evenly distributed.
07. Fill Muffin Cups: Divide the batter evenly among the muffin cups, filling each about 2/3 full. Optionally, you can sprinkle a few extra chocolate chips on each muffin.
08. Bake: Bake in the preheated oven for 18-20 min or until a toothpick inserted into the center of a muffin comes out clean.
09. Cool Muffin: Allow the muffins to cool in the tin for 5 minutes.
