High-Protein Fluffy Pancakes

Ingredients:

▶ 1 Egg
▶ 3/4 cup Greek yogurt (180 ml)
▶ 1-2 tsp Maple syrup (or brown sugar)
▶ 1/2 tsp Vanilla extract
▶ 1/2 cup Gluten-free flour mix (or regular flour if not coeliac, intolerant, or an IBS sufferer) (120 ml)
▶ 1 1/2 tsp baking powder

Instructions:

1. Mix the wet ingredients:

▶ In a mixing bowl, whisk together the egg, Greek yogurt, maple syrup (or brown sugar), and vanilla extract until well combined.

2. Incorporate the dry ingredients:

▶ Add the gluten-free flour mix or regular flour and baking powder to the wet ingredients bowl.
▶ Gently stir until just combined. (If the batter appears too thick, add a couple of tablespoons of yogurt.)

3. Cook the fluffy pancakes:

▶ Heat a non-stick pan over medium heat.
▶ Spoon the batter onto the skillet, forming pancakes of your preferred size.
