Savor a tropical treat with these Coconut Mango Chocolate-Dipped Popsicles. Made with the vibrant sweetness of ripe mangoes, the creamy richness of coconut milk, and a dash of vanilla extract, these frozen treats promise a symphony of exotic flavors. An 80% dark chocolate coating elevates the velvety texture of the mango and coconut base, creating a harmonious balance of sweetness and richness in every bite. 

Ingredients:

▶ 1 1/2 cups Mango cubes, about 2 mangoes
▶ 1 cup Canned coconut milk (240 ml)
▶ 1 tsp Vanilla extract

Topping:

▶ 100 g / 3.5 oz. 80% dark chocolate
▶ 1 tsp coconut oil

Instructions:

1. Blend the mango:

▶ Add mango cubes, coconut milk, and vanilla extract to a blender. Mix until the admixture becomes smooth and delicate.

2. Freeze:

▶ Pour the combined mixture into the popsicle molds and freeze for at least five hours, or until solid.

3. Topping:

▶ Hold the popsicles under warm water for a few seconds if they are difficult to remove from the molds.
▶ Melt the 80% dark chocolate and coconut oil.
▶ Stir until smooth.
▶ Now, dip each popsicle into the melted chocolate, coating it generously. 

4. Freeze the chocolate-dipped popsicles:

  Place the chocolate-dipped popsicles back in the freezer Enjoy!
