Ingredients for the muffins

▶ 1 cup all-purpose flour
▶ 1/2 cup cake flour
1/2 cup sugar
▶ 1/2 cup milk
▶ 1/4 cup melted butter
1 cup pumpkin purée
1 egg
▶ 1 tbsp pumpkin seeds
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1 1/2 tsp pumpkin pie spice
▶ 1 tsp vanilla extract
1 tsp ground cinnamon
1 tsp baking powder
1 tsp baking soda


Ingredients for cream cheese filling

▶ 1 tsp milk
▶ 1 tsp flour
1 tsp cornstarch
▶ 1/2 tsp vanilla extract
▶ 2 tbsp granulated sugar
4 oz cream cheese


Method

01. Using a hand mixer or stand mixer, cream together the cream cheese, sugar, vanilla extract, flour, and cornstarch. (This should take about 2 minutes. Your mixture should be smooth and creamy)
02. In a separate bowl, whisk together the sugar and melted butter.
03. Add the vanilla, pumpkin purée, and egg and mix until combined.
04. Fold in the flour, baking soda, baking powder, cinnamon, nutmeg, ground cloves, pumpkin pie spice, and milk until combined.
05. Add the cream cheese filling to a piping bag.
06. Pour batter into muffin liners about 3/4 of the way up.
07. Pipe about 1 tbsp of cream cheese into the center of each muffin. (Sprinkle some pumpkin seeds onto each muffin)
08. Preheat oven to 350 degrees Fahrenheit.
09. Place in the oven for 20 - 25 minutes.
10. Let muffins cool on a cooling rack for at least 30 minutes before serving.
